Mine is Grayling as well. We will keep two for lunch or dinner and they need to be cooked shortly after catching. A campfire, aluminum foil and your favorite seasoning and it's perfect. A four pound fly rod and you'll think you have a monster!
I think I like Grayling most because of all of the remote lakes and streams have them, and those remote locations are where I want to fish. You'll never find me on the banks of the Russian. Been there, done that, and hated the crowd.
